Three Scoopable Snacks

Eating food with your hands makes it more fun! Eating a small snack before lunch, before dinner and before bed can help keep your blood sugar stable and keep you happier. Try these fun scoopable snacks!

1) Pumpkin Dip -Scoop with Granny Smith Apples or Bosc Pear Slices

Ingredients

  • 3/4 cup (6 ounces) 1/3-less-fat cream cheese
  • 1/2 cup packed brown sugar
  • 1/2 cup canned pumpkin
  • 2 teaspoons maple syrup
  • 1/2 teaspoon ground cinnamon
Directions
  1. Place first 3 ingredients in a medium bowl, and beat with a mixer at medium speed until well blended. 
  2. Add syrup and cinnamon, and beat until smooth. 
  3. Cover and chill 30 minutes.

2) Black Bean Salsa- Scoop with Organic Tortilla Chips

Ingredients
  • 1 can organic black bean-no added salt
  • 1 can organic corn- no added salt
  • 1/2 cup chopped scallions
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
Directions
  1. Drain and rinse corn and black black beans
  2. In a large bowl, mix corn, beans, oil, scallions and lime juice
  3. chill for 15 minutes and serve.
3) Sun Dried Tomato Orzo-Scoop with Yellow Pepper Slices

Ingredients
  • 1 cup dried orzo
  • 1/2 cup sun dried tomatos-not in oil
  • 3 Tablespoons chopped basil
  • 1 tablespoon olive oil
  • Sprinkle lightly with feta cheese if desired
  • pepper to taste
Directions
  1. Boil orzo and drain
  2. mix together orzo, tomatoes, basil, oil and pepper.
  3. Serve immediately with sliced yellow peppers to scoop
